Rice is a wholesome and nutritious cereal grain and it has qualities, which make it ideally suited for special dietary needs. It is the staple food for almost two-thirds of the world's population. Rice is a complex carbohydrate, which means that it contains starch and fiber. Complex carbohydrates are digested slowly, and allow the body to utilize the energy released over a longer period of time, which is nutritionally efficient.
Simple and complex carbohydrates are an important part of the diet. They are like fuel for the body from which the human body derives most of its energy. At least half of the calories consumed should come from carbohydrates, especially complex carbohydrates like rice. Sugars, starch, and fiber are also forms of carbohydrates.
Rice contains a high percentage of carbohydrates i.e. 23 grams to 25 grams per 100 grams of cooked rice. Ninety percent of the calories of rice come from these carbohydrates. Rice contains only traces of fat hence only a one percent of its calories are derived from fat.
